8 cups of water

Fresh herbs such as parsley, thyme, or rosemary (optional)

Salt and pepper to taste


Cooking Instructions:


Wash and chop all the vegetables. Don't worry about peeling or chopping them too finely - they'll be strained out at the end.


Place all the vegetables, ginger, and turmeric in a large pot.


Add the apple cider vinegar, which can help to extract nutrients from the vegetables.


Add the water. The water level should be about an inch above the vegetables.


Bring the pot to a boil.


Once boiling, reduce the heat and let it simmer for at least an hour, preferably two. The longer it simmers, the more nutrients will be extracted.


Optional: add herbs for the last half an hour of simmering.


Season with salt and pepper to taste.


Strain the broth through a fine-mesh strainer into a large bowl or another pot. Discard the solids.


Once the broth has cooled, it can be stored in the refrigerator for up to a week or frozen for future use.
